Cheese Crusted Fish

Ingredients:

1/4 four
1/2 c. egg substitute or 2 large eggs, beaten
2 cups crunchy cheese flavored corn snacks
large zip top bag
1 cup panko (Japanese bread crumbs)
2 t. dried parsley flakes
1/2 t. ground coriander
1/4 t. pepper
4 white fish fillets (like tilapia)
2T. canola oil

1. Place four on plate (may be paper); place eggs in shallow bowl. Place cheese snacks in large zip-top bag. seal tightly and crush with finger tips until ground finely. Add panko, parsley, coriander, and pepper; mix until well blended. Place mixture in second shallow bow.

2. Sip each fillet in four (coating both sides). shake off excess. Sip each fillet in to egg (allowing excess to drip off) Finally, dip into crumb mixture (coating both sides); press with fingertips to coat evenly.

3. Preheat large saute' pan on medium 3-4 minutes. Place oil in pan; swirl to coat. Add one-half of the fish fillets (wash hands); cook 3-4 minutes on each side or until golden and crisp. Place on paper towels to drain. Repeat remaining fillets; add a little more oil, if needed. Serve.
