Let's Roast Some Veggies!!

Roasted Vegetables are yummy, healthy and filling!!!

Roasted Cauliflower

Break up head into Florette's on a foil lined cookie tray. Drizzle with olive oil, sea salt and red pepper flakes.
Heat oven to 400 degrees and roast for 30 minutes turning several times.
Yum!! Enjoy!!


Roasted Vegetable Medley

Sliced carrots
Sliced turnips
Sliced Brussels sprouts
Whole green beans??

Throw veggies in zip lock bag with some evoo and let sit for a little bit. Work the evoo in to the veggies.
Sprinkle some sea or kosher salt in with it too.
Put the veggies on a foil lined tray and bake til veggies are soft and a little crispy?? To you liking


Roasted Sweet Potatoes

Cut up several sweet potatoes in chunk.. Do not peel
Chop up a sweet onion
Saute' onion in a sauce pan til it is translucent. Put potatoes on foil lined pan and add the onion. Roast in oven til potato is soft and cooked through. You can add kosher salt to this also!

zucchini
yellow squash
green beans
Brussels sprouts
butternut squash! yum!
carrots
cauliflower
parsnips
maybe beets??
sweet potatoes
onions

Can you think of more??

I am not adding white potatoes as Lynn and Kate can't eat them.
