Coleen's Salsa Chicken

1# boneless, skinless chicken breasts cut into bite size chunks
2 t. taco seasoning
Cooking spray
2/3 c. salsa
2/3 c. shredded reduced fat cheddar cheese
1 -4 oz. can chopped green chiles drained
1/4 c. low fat sour cream
2 T. sliced ripe olives

1. Preheat oven to 475 degrees
2. Combine chicken and seasoning in a medium bowl, tossing to coat. Heat a large nonstick skillet coated with cooking spray over medium high heat. Add chicken and cook for 4 minutes or until browned, stirring constantly.
3. Arrange chicken in an 8" square baking dish coated with cooking spray, top with salsa, cheese and chiles.
4. Bake at 475 for 8 minutes or until chicken is done and cheese melted.
5. Top each serving with a dollop of sour cream and chopped olives.

QUICK-EASY AND DELICIOUS!!!

Can serve over rice.
