Auntie Ona's Penuche



This is my aunt's recipe, she and my grandmother both made it.  She said she also calls it Ona's brown sugar fudge.  I have tried 4 times to make it and the last time was almost perfect but not quite.  Good luck.

Auntie Ona’s Penuche

 

1 cup brown sugar

1 cup regular sugar

½ cup evaporated milk

1/3 cup white Karo syrup

dash of salt

2 tablespoon marshmallow cream

1 tsp vanilla

1 cup chopped pecans

 

Combine first five ingredients and cook over medium heat until softball stage.  Remove from heat and add marshmallow cream and vanilla.  Beat by hand until candy begins to thicken, and nuts and continue beating a couple of minutes.  Pour into buttered pan before candy becomes too thick to pour smoothly.  When cool cut into squares.  If making ahead of time, wrap and keep in airtight container.
