Hummus

16 oz. can organic chickpeas
1 lemon
1 clove garlic
1/4 c. Tahini
2 T. Olive oil
1/2 t. salt

Drain the chick pears; reserving 1/4 to 1/2 c. liquid. Squeeze juice from lemon. Mince the garlic. Puree' the chickpeas and 1/4 C. liquid, lemon juice, garlic, tahini, olive oil & salt in food processor or blender unitl very smooth. (As it sits, it gets firmer, so I liked to keep some more liquid to add if needed) Serve with pita chips or veggies.

I got this recipe from my cousin Kathy. She made it for a family gathering last summer and we all loved it so much we were almost licking the serving bowl to get it all. We are not a well mannered bunch, so you can imagine the goings on!!
