Poppyseed Chicken

We had this last night, and Nathan loved it. There is not much left over! It is one of the specialties at our local meals to go/busy mom's best friend place (the Dreamy Spaghetti that Hilary posted in from there too). This one is easy and yummy but rich!

4 Boneless skinless chicken breasts, cooked and cubed
3/4 cup sour cream*
1 can cream of chicken soup
1 tsp. poppy seeds
1 1/2 sleeves of Ritz crackers (about 50 crackers)*
3/4 stick butter

Preheat oven to 350. Place chicken in bottom of greased casserole dish. Mix sour cream, cream of chicken soup and poppy seeds together. Pour over chicken (it helps to stir it around a bit).

Melt butter, crush crackers and stir together. Layer over the top of the chicken. Bake for 35-40 minutes.

*Since we are trying to make healthy choices, I use nonfat plain yogurt instead of sour cream and bought reduced fat crackers. I am sure there is a better solution than using butter or even margarine with the crackers. Any suggestions?

DO NOT use margarine at all! It is so bad for you. Butter is not great but a better alternative. margarine has Trans Fat in it.
